ABOUT Pulihora RECIPE

Tamarind rice or Pulihor is a South Indian preparation, it is a bit sour in taste and generally cooked rice is seasoned with tamarind paste.

Ingredients Serving: 5

  1. For Rice -
  2. Rice 1/2 cups
  3. Water 3 Cups
  4. For tamarind paste -
  5. 35 gms tamarind soaked in water for 1/2 hr
  6. 1/4 tsp mustard powder (dry roast)
  7. 1/4 tsp jeera methi powder (dry roast)
  8. Small piece of jaggery
  9. 1 tbsp sesame powder (dry roast )
  10. 2 green chilli
  11. 1/2 tsp Turmeric
  12. 2 sprigs curry leaves
  13. 1/4 tsp dry ginger powder or 1/4 inch fresh ginger julienne
  14. 1 tsp oil
  15. Salt 2 tsp
  16. For Seasoning -
  17. 3 tbsp oil
  18. Mustard seeds 1/4 tsp
  19. Jeera 1/2 tsp
  20. Urad 1/2 tsp
  21. Chana dal 1/2 tsp
  22. Peanuts 1/4 cup
  23. Cashew few (optional )
  24. 2 green chilli
  25. 2-3 dry chilli
  26. A pinch of hing (asafoetida )

Instructions

  1. Cook rice fluffy and not sticky. Let it cool down completely, take a big plate and try spreading it
  2. For tamarind paste
  3. Soak tamarind in water don't add too much water to make the paste it should be a thick paste
  4. Grind mustard,jeera,methi
  5. Cook your tamarind paste until it thickens using all ingredients mentioned in tamarind paste
  6. For seasoning -
  7. Let the oil heat up well add mustard seeds ,jeera, chana dal,urad dal,peanuts,cashew one by one until they are browned, add green chilli, curry leaves and dry chilli let them roast well. At last add hing
  8. Assembling -Take rice add tamarind paste and seasoning using your hand mix thoroughly.
  9. And tadka. Pulihora is ready. Serve
