It is a super delicious and festive dish of Rajasthan which is made on Gangaur Pujan. On this day we worship Gangapur and offer these dhoklas

Ingredients Serving: 4

  1. For dhoklas-----
  2. Baajri aata 1cup
  3. Water
  4. Whole wheat flour 1cup
  5. Boiled molar 1/2 cup
  6. Salt, Red chilli powder 1/2 spoon
  7. Haldi 1tsp oil and water
  8. Moth aata 1/2 cup
  9. Besan 1/2 cup
  10. Aata 1/2 cup
  11. Boiled phogla 1/2 cup
  12. Saagi water 2tbsp
  13. Salt, Red chilli powder 1tsp
  14. Oil and water
  15. Garam masala 1/2 tsp
  16. For mogar subji----
  17. 1cup mogar
  18. Oil 2tbsp
  19. Salt, Haldi
  20. Red chilli powder 1tsp
  21. Coriander powder 2tsp
  22. Kaachri 1tsp
  23. For raita----
  24. Curd 2 cups
  25. Phogla 1cup, Ghee as required
  26. Salt & Powdered sugar as required

Instructions

  1. First soak phogla in water. It will come upside and waste part will remain at the bottom
  2. Take that phogla out and boil it
  3. For raita---
  4. Take curd and phogla and whisk it to make the raita, keep it in fridge for it to remain cool.
  5. For mogar subji----
  6. Heat oil in the pressure cooker, add jeera once brown add mogar and other spices
  7. Add 2 cups of water and mix. Pressure cook till one whistle. Subji will be ready. Add kaachri to it.
  8. For dhokla---
  9. Take bajri and water to make a soft dough. Make equal size balls and make design with fingers as shown in the picture
  10. Take mogar, spices, wheat flour and oil and make a dough to make flat round dhoklas and in center make a hole
  11. Take all the aatas, phogla and spices add water and again make dhoklas like mogar dhokla
  12. Put all the dhoklas in the steamer and cook for 15 to 20 mins.
  13. Serve them with powder sugar, ghee, subji and raita
