ABOUT Shahi Paneer RECIPE

Paneer cooked in a rich and creamy sauce. It can be paired with naan, roti or jeera rice

Ingredients Serving: 4

  1. Paneer cubes - 250 gm
  2. Onion - 1 chopped
  3. Almonds - 5 nos
  4. Cashew - 2 tbsp
  5. Melon seeds -1 tbs
  6. Garlic pods -5
  7. Ginger - 1 inch (chopped)
  8. Red chilli powder - 1/2 tsp
  9. Garam masala - 1/4 tsp
  10. Turmeric powder -1/4 tsp
  11. Coriander powder -1 tsp
  12. Cardamom powder -1/4 tsp
  13. Saffron - few strands (crushed)
  14. Curd -1/4 cup whisked
  15. Full fat cream - 2 tbsp
  16. Salt - to taste
  17. Sugar -1 tsp
  18. Water - 2 cups
  19. Butter - 3 tbsp
  20. Chopped coriander leaves - 1 tbsp
  21. To temper:
  22. Bay leaf- 1
  23. Cardamom - 1
  24. Cloves- 3

Instructions

  1. In a bowl add 2 cups water, chopped onion, garlic, ginger, cashews, almonds and melon seeds. Boil it for 10 mins. Drain the water. Keep it aside. Once it cooled grind it to a fine paste.
  2. In a pan add butter and temper with the ingredients given under "To temper". Add the ground onion paste in medium flame.
  3. Once the butter oozes out the sides of the pan add the red chilli powder, garam masala, turmeric powder, coriander powder. Mix well
  4. Now add the whisked curd, salt, sugar, stock and required water, boil it for 5 mins. Followed by paneer cubes, crushed saffron and cardamom powder. Stir it
  5. Cook in low flame for 5 mins until the paneer is cooked. Finally add the cream and switch off the flame.
  6. Finally garnish with chopped coriander leaves.
