Ingredients Serving: 6

  1. Par boiled aloo 15-20
  2. Roughly chopped onions 3-4
  3. Roughly chopped tomatoes 2
  4. Hari mirch 2
  5. Ginger small piece
  6. Thick curd 1 cup
  7. Salt to taste
  8. Haldi pinch off
  9. Kashmiri red chilly powder 1 tsp
  10. Dhaniya powder 1 tsp
  11. Jeera 1/4 tsp
  12. Hari ilaychi 2
  13. Laung 2-3
  14. Hing pinch off
  15. Kasuri methi 1 tsp
  16. Sugar 1 tsp
  17. Oil for frying + 2 tblspn
  18. Kaju paste 1 tblspn (optional)

Instructions

  1. Peel boiled potatoes and make holes in aloo using fork.
  2. Fry in the hot oil till golden brown. Keep aside.
  3. In a kadai heat 1 tblspn oil . Add jeera, ilaychi, laung and hing.
  4. Add chopped onions and adrak. Saute till golden brown.
  5. Add chopped tomatoes and green chilly. Add all dry spices. Cook till oil separates.
  6. Switch off the flame and let it cool.
  7. Grind the ready mixture in smooth paste.
  8. In the same kadai heat 1 tblspn oil . Add grind onion paste. Add salt and saute till mixture start leaving kadai. Add beaten curd, mix well.
  9. Add fried potatoes, mix well. Add 1 cup water and let it boil.
  10. Add kasuri methi. Cover the kadhai and cook on low flame for 5 mins.
  11. Garnish with hara dhaniya, serve hot with roti or rice.
