ABOUT Maharashtrian Gode Varan RECIPE

Varan is a Maharashtrian preparation of split pigeon peas lentil ( Tuvar dal ) curry. This Satvik Varan served with steamed rice along with a slice of lemon is a homely food as well as great comfort. Gode Varan is a thick consistency Varan with coconut paste.

Ingredients Serving: 4

  1. 1 cup ( 100 gm ) Toor dal
  2. 2 green chillies ( chopped in big pieces )
  3. 2 tbsp onion chopped
  4. 1/4 cup fresh coconut
  5. 1/2tsp mustard seeds
  6. 1/2tsp cumin seeds
  7. 1/4tsp turmeric powder
  8. Curry leaves 5-6
  9. Asafoetida a pinch
  10. Salt as required
  11. Oil as required
  12. Coriander leaves 1/4 cup

Instructions

  1. Wash toor dal and cook with water and chilies in a pressure cooker.
  2. Gather coconut, turmeric powder, onion, cumin seeds, turmeric powder, coriander leaves. Add water and grind to a smooth fine paste. there should be no small chunks or pieces of coconut in the paste. keep the ground paste aside
  3. Heat oil in a pan or pot. add mustard seeds and crackle them.
  4. Then add curry leaves and asafoetida.
  5. Pour cooked Toor dal and ground paste.
  6. Add a little water. The consistency of Varan should be thick. Add salt. Stir and cook on a medium flame.
  7. Dont allow it to boil. When it comes to boil, make the gas on simmer and let it cook on simmer for 2 minutes.
  8. Switch off the gas and serve hot.
