Ingredients Serving: 6

  1. Fresh ginger - 250gm
  2. Garlic paste - 3tbsp
  3. Mustard oil - 100gm
  4. Salt - 2tsp
  5. Black pepper - 1/2 tsp
  6. White vinegar - 1/2 cup for soaking
  7. Mustard seeds - 3tsp

Instructions

  1. Wash ginger thoroughly, peel the skin and julienne them.
  2. In a glass jar add vinegar, 1 tsp salt, ginger julienne and keep overnight.
  3. Grind mustard seeds coarsely. In a wok, smoke mustard oil and saute garlic paste till it changes color. Add powdered mustard seeds / rai, salt, black pepper. Add ginger sticks without the vinegar and add all the spices. Mix it well for few minutes. Discard vinegar.
  4. Turn off the gas and let it cool down then transfer the pickle into a glass jar. Keep at room temperature.
  5. Digestive ginger garlic pickle is ready for use. It stays good for at least one year.
