ABOUT Besan Dhokla RECIPE

This spongy and yummy Gujrati dish is had for breakfast, as a side dish and even as snack. Dhokla is prepared out of rice and chana dal's fermented batter but this is quick and easy microwave version that simplifies the whole process and gets done in less than 20 minutes.

Ingredients Serving: 8

  1. 2 Cup : Besan/chickpea flour
  2. 1 Cup : Yogurt
  3. 1/2 to 3/4 Cup : Water
  4. Salt to taste
  5. 2 tbsp : Oil
  6. 2 tbsp : Castor sugar
  7. 1/4 tsp : Turmeric
  8. 1 tsp : Ginger
  9. 2 to 3 : Green chilli
  10. 1 tsp : Baking powder
  11. 2 tsp : Eno/fruit salt
  12. For tempering : 1 tbsp : Oil
  13. 1 tsp : Mustard seeds
  14. 1/8 tsp : Asoefetida
  15. 1 tsp : Green chilli, finely chopped
  16. 1/3 cup : Water
  17. 2 tsp : Sugar
  18. Salt to taste
  19. 2 tbsp : Lemon/lime juice
  20. Fresh coriander (for garnish)
  21. Fresh/desicated coconut (for garnish)

Instructions

  1. Grease a microwave safe bowl with oil and set aside.
  2. Make a paste of green chillies and ginger adding a table spoon of water if required.
  3. Sieve besan in a bowl and add yogurt, sugar, salt, turmeric,oil,baking powder,green chilli ginger paste,water and mix thoroughly without any lumps.
  4. Now add in the fruit salt and mix until combined. Pour it immediately into the greased bowl and tap on counter a couple of times.
  5. Microwave on high for 16 minutes and insert a toothpick and check for doneness, if not microwave on high for couple more minutes.
  6. As every oven is different cooking times may differ. My microwave is 800 watt so it took exactly 16 minutes.
  7. Cool this for couple of minutes. Meanwhile let's Prepare the tempering. In a small sous pan add the oil once hot add the asafoetida, mustard, chopped green chilies and saute until mustard crackle. Next add in the water and sugar. Now simmer this for few minutes.
  8. Turn off the heat ,add lemon juice and salt. Cool the tempering slightly and add pour it over the surface of the dhokla evenly.
  9. Sprinkle chopped coriander and grated coconut. Let it rest for few minutes so that it absorbs all the juices. Now slice and serve with green chutney.
  10. Spongy gujrati dhokla done in less than 20 minutes. Slightly Tart and mildly sweet snack for your cup of tea.
