ABOUT Chicken Poha Bhujing/ Barbeque chicken with flattened rice RECIPE

Chicken poha bhujing is a unique dish that you get in Vasai Virar region, Agashi bhujing centre, to be precise. Its a preparation made in a particular way since last 7-8 decades. Anyone going by that route, this dish is a must try for its unique combination of ingredients and special taste of the spices. Have tried to make it as close as possible. Of course, having the authentic and original one makes a difference but making your own is fortuitous. They grill the chicken on coal oven and grind masala with mortar which gives distinct flavour. I have tried to make up for those by adding coal smoke and coarsely grinding of spices. Bhujing can be your one pot meal or brunch or as tapas.

Ingredients Serving: 4

  1. Boneless chicken cut into medium pieces 1/2 kg
  2. 3 medium potaoes cut into half or third
  3. Poha/ flattened rice 250 grams/ 3 cups. Choose basamati or sugandhi variety if available.
  4. Onion two [medium sized]
  5. For marination:
  6. Turmeric powder 1/2 teaspoon
  7. Coriander and cumin powder 2 teaspoon
  8. Garam masala powder 1 teaspoon
  9. Red chilly powder 1/2 Teaspoon
  10. Salt to taste
  11. For Masala:
  12. Dry coconut roasted 1 cup
  13. Garlic cloves 7-8
  14. Green chillies 2-3
  15. Cardomom 4-5
  16. Cinnamon stick 1/2 inch
  17. Black peppercorn 5-6
  18. Cloves 3-4
  19. Oil 1 tablespoon
  20. For smoky flavour: One coal, 1/2 teaspoon ghee
  21. Salt to taste
  22. Coriander leaves for garnishing

Instructions

  1. Clean chicken and potatoes
  2. Add marination spices with salt to chicken and potatoes and rest it for 30 minutes
  3. After 30 minutes, thread chicken pieces and potaotes to skewer and broil them on glas flame
  4. Let the chicken and potatoes get cooked from all the sides
  5. Edges would start charring giving it a barbecued look
  6. Brush some oil in between while cooking on gas flame
  7. Cook chicken and potatoes till outer surface gets cooked. No need to fully cook it on flame as we are going to cook it into vessel further
  8. Cut onion into long pieces
  9. In a vessel, heat oil
  10. Add chopped onion
  11. Add skewered chicken and potato pieces
  12. Cover the pan with a deep plate and pour water on the plate.
  13. Let chicken and potaotes cook for 5-10 minutes
  14. Meanwhile grind all masala ingredients (coconut, garlic, green chilly, whole spices) to a coarse paste.
  15. To give a smoky flavour, heat coal on gas flame
  16. Add this coal to a small bowl and drizzle drops of ghee over the coal. There will be smoke out of that.
  17. Put this bowl in pan containing chicken and cover the lid tightly
  18. Let the smoke be absorbed by chicken for 5 minutes
  19. Now remove lid, take out the coal bowl
  20. Add ground masala and flattened rice/poha
  21. No need to soak poha as it will get wet with juices of chicken and oil
  22. Add salt to taste
  23. Mix well
  24. Garnish with coriander leaves and dash of lemon
