ABOUT Kanda bhajji RECIPE

This is an excellent accompaniment with evening tea.

Ingredients Serving: 4

  1. 1 large white onion /red onion
  2. 3 tbsp gram flour/besan
  3. 2tbsp rice flour for extra crunch
  4. Half piece ginger
  5. 5/6 garlic pods
  6. 2 green chillies
  7. Salt to taste
  8. Ajwain [caraway] 1 tsp
  9. Curry leaves 7/8 finely chopped
  10. Oil for frying

Instructions

  1. Roughly chop the onions and sprinkle some salt on it and leave aside for 15 mnts.
  2. Meanwhile grind the ginger garlic and green in a mortar to fine paste
  3. Take a bowl to it add the onions , the paste , ajwain and salt and the Curry leaves and coriander leaves (optional) as the Curry leaves give an amazing flavour
  4. Slowly add the gram flour and rice flour and mix well till well Incorporated
  5. If needed add water .the consistency should not be water but instead you should be able to scoop it with the the spoon
  6. Heat the oil .add 2 tsp hot oil to the batter ad Mix well .once the oil is heated scoop in the batter and fry well till golden brown .
  7. Remove on tissue paper .enjoi with ketchup and chai
