Ingredients Serving: 4

  1. Milk - 2 liters
  2. Sour Curds / Yogurt - 1 cup
  3. Sugar - 1-1/2 cups (adjust as per taste) + 1/2 Cup Sugar (for caramelize)
  4. Edible gum powder - a pinch
  5. Ghee - 1 tablespoon
  6. Blanched almonds - 1 tablespoon (optional)
  7. Cardamom powder - 1/4 teaspoon (optional)

Instructions

  1. Take a heavy bottom pan boil 2 liters milk and reduce to 1/3rd. Let it simmer.
  2. Then add curd slowly, stir constantly so that it starts to curdle.
  3. In a separate pan add 1/2 cup sugar, caramelize it (do not add water) once it turns brown, add ghee and edible gum. Stir and transfer into milk.
  4. Stir constantly till milk becomes thick and is evaporated.
  5. Add cardamom powder and remove from the stove. Serve hot.
