ABOUT Caramelized rice RECIPE

A quick, simple and easy recipe of caramelized rice, which can be served with some spicy curry.

Ingredients Serving: 4

  1. Basmati rice 2 cups
  2. Ghee 1 tbsp
  3. Green cardamom 2,
  4. Salt 1 pinch
  5. Water
  6. Sugar 1/2 tsp
  7. peppercorns 5-6,
  8. star anise 1,
  9. jeera 1 tsp.


  1. Wash the rice thoroughly with water. Drain all the water and keep it aside.
  2. In a pressure cooker, put the ghee. Let it heat a bit and then add the sugar.
  3. Let the sugar caramelized, by changing its color to brown.
  4. When it turns to brown color, add the jeera, cardamom, star anise and peppercorns.
  5. Let them splutter and lower the flame. Keep stirring.
  6. Now add the washed rice to it and mix properly.
  7. Add the salt and let it mix. Keep stirring for 1-2 minutes.
  8. Then add the water to rice and close the lid.
  9. Close the flame after 2 whistles.
  10. Caramelized rice is ready. Serve it with your favourite curry.
