Ingredients Serving: 5

  1. 1 x 1.5 kg chicken
  2. 1 500ml can of strong beer
  3. For Marinade
  4. 1 heaped tsp of fennel seeds
  5. 1tsp Cumin seeds
  6. 1tsp smoked paprika
  7. 1tsp brown sugar
  8. 1tsp chilli powder
  9. Sea Salt
  10. 2tsp black pepper powder
  11. 3tbsp Olive oil


  1. Preheat the oven to 200°C .
  2. Bring the chicken to room temperature
  3. In a pestle and mortar, bash up the fennel, cumin seeds, paprika, brown sugar, chilli powder,sea salt and black pepper.
  4. Stir in 3 tablespoons of oil until you get a paste
  5. Now drizzle all over the chicken, inside and out, using your hands to make sure you get it into all the nooks and crannies.
  6. Crack open the beer, and pour it in a can till it is just about half full.
  7. Then lower the chicken’s cavity on to the top of the can so it looks as though the chicken is sitting on the can.
  8. Carefully sit the chicken on the very bottom of the oven.
  9. Cook for 1 hour 10 minutes to 1 hour 30 minutes, or until the meat pulls away from the bone and the juices run clear. If this isn’t the case (all ovens are slightly different) just cook for a bit longer.
  10. Once done, carefully remove the can and loosely cover the chicken
