ABOUT Gluten free Banana Muffin RECIPE

Banana and walnut is as always a nice combination. Here is my version of gluten free (no maida) muffin sweetened with honey.

Ingredients Serving: 6

  1. Coconut flour – 1/2 cup
  2. Salt - 1/4 tsp
  3. Baking Soda - 1/2 tsp
  4. Eggs -4
  5. Coconut oil - 1/4c
  6. Honey - 1/4c
  7. Medium size Banana - 2
  8. Vanilla extract- 1 tsp
  9. Walnut - 1/4 c and more for topping


  1. Preheat oven to 180 for 10 min and line the liners in muffin pan.
  2. Combine coconut flour, salt and baking soda.
  3. Using a whisk, mix eggs, coconut oil, vanilla and honey.
  4. Add mashed bananas and mix until combined.
  5. Add wet to dry ingredients and whisk until well combined. 
  6. Stir in 1/4 cup walnuts and pour in muffin liners and top it with walnuts.
  7. Bake until toothpick inserted comes clean for about 15 min.
