When I visited Pazhamudirsozhai to buy veggies, i was surprised to see beetroot with leaves. It looks fresh and tempting. I enquired on how to use it, the store manager said it is mainly used for making stir fry. It tastes great with Morkozhambu and Rice.

Ingredients Serving: 2

  1. Beetroot with leaves 2
  2. Oil
  3. Urad dal 1/2 tsp
  4. Mustard 1/2 tsp
  5. Salt 1/2 tsp
  6. Grated coconut 1/4 cup
  7. Curry leaves

Instructions

  1. Rinse and drain beetroot greens and cut in to small pieces
  2. Heat oil. When it is hot, add Mustard. When it cracks add Urad dal, hing and curry leaves
  3. Add cut greens and salt. Saute well
  4. Add little water and cover with a lid to cook for 5 mins on low flame
  5. Add grated coconut and mix well
  6. Serve hot with rice
