Have used pani puri's puri and stuffed them and coated with besan batter to deep fry them

Ingredients Serving: 4

  1. For stuffing:
  2. Boiled and mashed potatoes 4 medium size
  3. Finely chopped onions 1/2 cup
  4. Finely chopped capsicums 1/4 cup
  5. Grated cheese 1/4 cup
  6. Grated carrots 1/4 cup
  7. Onion garlic powder (Kusum masala) 1 tsp
  8. Salt to taste
  9. Garam masala 1 tsp
  10. Amchur powder 1/2 tsp
  11. For tempering:
  12. Oil 2tsp for tempering
  13. Rai/mustard seeds 1/2 tsp
  14. Jeera/ cumin seeds 1/2 tsp
  15. Haldi powder 1/2 tsp
  16. Chopped curry leaves 5-6
  17. Hing/ asafoetida 1/8 tsp
  18. For batter:
  19. Besan 1 cup
  20. Haldi turmeric powder 1/2 tsp
  21. Kashmiri chilli powder 1/2 tsp
  22. Salt to taste
  23. Baking powder 1/4 tsp
  24. Water according to need
  25. Pani puris around 12-14
  26. Oil for frying

Instructions

  1. Mix all ingredients of the stuffing and add the tempering of Rai , jeera , curry leaves, hing haldi in oil to the stuffing. Make holes in puri carefully and fill the stuffing inside it.
  2. Make the batter for pakoda using besan and the ingredients mentioned. Add water according to need.
  3. Dip the stuffed Pani Puris in the batter carefully and put them in the frying pan for deep frying in oil. Cover the holes made for stuffing with the besan mix if required.
  4. Fry the pakodas properly till golden brown and keep them on tissue paper to remove extra oil. Serve with ketchup or chutney...
