Ingredients to make Khao Pad (Thai Fried Rice)

  • Cooked rice 1 1/2 cups
  • chicken sliced 400 gms
  • Corn flour 1 table spoon
  • 2 eggs beaten
  • Finely chopped garlic 1 table spoon
  • onion slice 1/2 cup
  • oil 5 table spoon
  • 1/4 cup Thai chili pepper
  • 1/2 tea spoon Thai pepper powder
  • 2 table spoon fish sauce
  • 1 table spoon soy sauce
  • salt to taste
  • lime juice 1 table spoon
  • Sugar 1 tea spoon
  • tomato chopped
  • Green onion chopped
  • coriander leaves handful for garnishing

How to make Khao Pad (Thai Fried Rice)

  1. Mix the chicken with soy sauce and cornflour and keep aside for 10 minutes.
  2. Fry egg and cut into pieces.
  3. Heat oil in a pan.
  4. Add chopped garlic. Saute until nice aroma comes out.
  5. Add chicken. Stir fry for 10 minutes.
  6. Add onion and chili pepper.
  7. Add tomato, green onion and egg.
  8. In a different wok add fish sauce, salt, sugar, lime juice, thai pepper powder and rice.
  9. Mix them together.
  10. Add the vegetable and chicken in rice.
  11. Again mix until all the ingredients are well combined.
  12. Serve with some lemon wedges and cucumber slices.

My Tip:

This should be served hot. Drizzle some lemon juice just before serving to add some extra freshness. Best served with Thai lemon chicken.
