Ingredients Serving: 4

  1. Lauki / bottle guard - 1/2 kg
  2. Khoya - 200 g
  3. Clarified butter / ghee - 4 tablespoons
  4. Sugar - 1 cup ( as per your taste)
  5. Green cardamom powder- 1 teaspoon
  6. Kewda essence- 2-3 drops
  7. Green food color - 1 drop ( optional)
  8. Almonds - 7-8 Chopped


  1. Peel, wash and grate Lauki. Squeeze out all the water from the Lauki and keep aside.
  2. Heat clarified butter in a heavy bottom pan
  3. Add Lauki and mix well.
  4. Stir - Fry for 3-4 minutes till lauki is cooked
  5. Now add sugar and mix well. Cook till water evaporates
  6. Add crumbled khoya and mix well
  7. Add green cardamom power and kewda essence.
  8. Add geen food color, this optional. Mix well
  9. Grease a plate with little ghee. Transfer mixture to the plate and press evenly
  10. Sprinkle chopped almonds on the top and press it lightly.
  11. Rest for 5-6 hours. Slice and serve
