In a pan take khoya and powdered sugar. Put this mixture over low heat flame and cook for stirring consistency. It will become grainy.
When the mixture become creamy add saffron stand. Gulkund and pistachios. Keep aside for cooling.
Paal the lauki and remove the seeds. Cut it into 4'X4' slices. Prick well with a folk and soak thease slices into water.
In a pan boil the water and cook these slices for 4-5 minutes or till it change the colour. Drain the water.
In pan take sugar and 1 table spoon water and make sugar syrup. Add slices into it. Heat the pan on low heat and let the sugar dissolves completely. Keep it aside for 10 minutes.
After 10 minutes When slices get mixed with sugar syrup remove it from syrup before getting dry. Now it is ready for filling and wrapping.
Take the filling into equal parts. Take one portion of the filling on a lauki slice.fold it along the sides to form a triangle and stud it with a cloves. Now lauki ki gilauri is ready . Garnish with silver foil and serve chilled.
