Ingredients Serving: 6

  1. Sem -1/2 kg, chopped
  2. Baigan - 1, medium sized, chopped
  3. potatoes - 2,cubed
  4. onions - 2, thinly sliced
  5. garlic - 4 to 5 cloves
  6. Yellow mustard - 3 tsp
  7. Red chilies - 4
  8. Cumin + pepper powder - 1.5 tsp
  9. methi seeds - 1 tsp
  10. tomatoes - 2, chopped
  11. garam masala - 1 tsp
  12. haldi - 1 tsp
  13. Red chili powder- 1/2 tsp
  14. dhania powder - 1 tsp
  15. oil 3 tbsp
  16. salt to taste

Instructions

  1. Grind 1 chopped onion, garlic, red chilies, cumin pepper powder, mustard seeds with little water to form smooth paste. Keep it aside
  2. Shallow fry the sem in oil until done, keep it aside.
  3. In same pan, add methi seeds and saute for few seconds. Add onions and cook till onions are translucent.
  4. Add the ground paste, haldi, chili powder, and dhaniya powder. Mix well
  5. Cook the masala for 5 min.
  6. Now add 1 cup water, potatoes and brinjal. Cook for 2 min.
  7. Add the fried sem, salt and cook for another 5 min. Add 1 to 2 cups water as required. Cover and cook until done
  8. Add chopped tomatoes and cook for 3 min.
  9. Add garam masala, cook for another 2 min and then switch off the flame. Garnish with coriander leaves and serve warm
