Haribhari Raj Kachori

Ingredients to make Haribhari Raj Kachori

  • all purpose flour/maida 1 cup
  • semolina 2 tbsp
  • oil 2 tsp
  • spinach puree 3 tbsp
  • salt to taste
  • oil for frying
  • water as required
  • For Filling
  • Boiled green peas 1/3 cup
  • gram flour 2 tbsp
  • salt to taste
  • cumin seeds 1/2 tsp
  • fennel seeds 1/2 tsp
  • onion chopped 2 tbsp
  • red chili powder 1 tsp
  • coriander powder 1 tsp
  • water 2-3 tbsp
  • oil 1 tbsp
  • For green curd chutney
  • curd 1/2 cup
  • coriander leaves 3 tbsp
  • green chili 1
  • mint leaves 1 tbsp
  • salt to taste
  • For Serving
  • sweet tamarind chutney 2 tbsp
  • Sev 2 tbsp
  • pomegranate seeds 2 tbsp
  • Boiled , chopped potato 1/2 cup

How to make Haribhari Raj Kachori

  1. In a bowl, add maida and semolina
  2. Add salt ,spinach puree,2 tsp of oil and mix well
  3. Add adequate water and knead a semi-soft dough . Keep it aside for 20 min. Divide dough into equal portions
  4. Roll dough into small puris. Heat oil for frying over medium heat
  5. Deep fry puris in hot oil until puffed up and golden brown
  6. For filling: Heat 1 tbsp oil in a pan, splutter cumin seeds and fennel seeds
  7. Add onions and saute until translucent
  8. Add gram flour and cook for 2-3 min.
  9. Add boiled peas ,salt red chili powder, turmeric powder , coriander powder and mix well
  10. Add water and mix well, Cook until mixture dries up. Keep it aside
  11. For Chutney: Blend coriander leaves,mint leaves,green chili, curd and salt to form smooth chutney
  12. Add 1 tbsp of water to chutney and mix well
  13. Assembling Kachori: Make a small hole at the center of kachori
  14. Add small pieces of boiled potatoes, sprinkle some salt
  15. Add green peas filling on top of potatoes
  16. Add sweet tamarind chutney on top
  17. Add green chutney. Garnish with sev and pomegranate seeds. Serve immediately
