ABOUT Pahadi Raj Maa RECIPE

Pahadi raaj Maa is a famous dish of Uttarakhand. This is made up of different colours of Raj Maa and tastes so good even though its made up without onions .

Ingredients Serving: 4

  1. Raj Maa....1 cup
  2. Ginger...1 inch piece
  3. Green chillies...2
  4. Coriander seeds...1 tea spoon
  5. Cumin seeds...1 tea spoon
  6. Salt to taste
  7. Desi ghee...1 table spoon

Instructions

  1. Soak raj maa overnight
  2. In q pressure cooker put adequate water and add soaked raj maa
  3. In a mortar and pestle take ginger, green chillies, coriander seeds, cumin seeds and grind it nicely
  4. Add this paste to rajmaa in cooker, also add designer and tomatoes in the cooker , cover it and let it boil for half an hour atleast
  5. Open the cooker, mash it with ladle and see the consistency of the raj maa and cook if it required some more cooking
  6. You may give talks of red chilly powder, cumin seeds, I skipped this step
