ABOUT Long Latika RECIPE

Long Latika is a traditional sweet made on the festivals of the Bangal region. The stuffing of mawa and dry fruits in a crispy wrapped with syrup and the flavoured of the cloves is all liked.

Ingredients Serving: 2

  1. To make a dough
  2. Maida or all purpose flour 1 cup
  3. Desi ghee 2 tablespoons
  4. Water as required
  5. For stuffing
  6. Mawa or khova 100 grams
  7. Powder suger 1 tablespoon
  8. Cashew 3 to 4
  9. Almonds 3 to 4
  10. Pista 3 to 4
  11. Small cardamom 3 to 4
  12. Cloves 6 to 7
  13. For sugar syrup
  14. Sugar 1/2 cup
  15. Water 1 cup
  16. Ghee for frying

Instructions

  1. Add flour and ghee in a bowl and mix hard dough like whole with the help of water. To make this much flour it take less than 1/2 cup of water. Cover the dough and keep it for 20 might.
  2. Make stuffing Pour Mawa in bowl and stir it slowly on low flame. Fry until light colour changes and take out in a plate.
  3. Cut the cashew, almonds and pista into a small pieces. Peel cardamom, make powder.
  4. Powder sugar, finely chopped dry fruits, Mawa, cardamom powder and mix all the ingredients.
  5. After the dough is set, crush the dough and small balls. Take one ball and flatten it with the plam. Roll in 3 inch diameter. Now put 1 tablespoon stuffing on it.
  6. Fold both sides.
  7. Sealed it. With the help of cloves.
  8. Prepare all the lakita same way.
  9. Put ghee in the pan and lightly heat it. When ghee is heated, add 5 to 6 Latika in the pan and turn it on until it becomes golden brown on low flame. Take out all Latika in a plate.
  10. Make a sugar syrup Mix sugar and water in a sauce pan and keep it on a fire. When sugar dissolves in water, then cook for another 2 minutes. On put 1 or 2 drop in a plate and check sugar syrup if it sticking between the thumb and finger, then sugar syrup is ready.
