Tamarind pulp gives a nice tangy flavour and taste to chickpeas. Another secret ingredient is harad which make it easy to digest and gives the chole its black colour

Ingredients Serving: 6

  1. Half kg white chickpeas
  2. 2 onions
  3. 4 tomatoes
  4. 1 inch ginger
  5. 4-5 garlic cloves
  6. 2 green chillies
  7. Salt 1 teaspoon
  8. Black salt 1/2 teaspoon
  9. Red pepper powder 1/2 teaspoon
  10. A pinch of asafoetida powder
  11. Cumin seeds 1/2 teaspoon
  12. Ajwain 1/4 teaspoon
  13. Coriander powder 1/2 teaspoon
  14. Garam masala powder 1 teaspoon
  15. Tamarind paste 2 teaspoon
  16. Dry roasted and powdered Harad 2
  17. Kastoori methi 1/2 teaspoon
  18. Ghee 2 tablespoon

Instructions

  1. Boil chickpeas in pressure cooker for 20 minutes in water and add salt in it.
  2. Meanwhile in another pan put ghee. Add asafoetida powder, cumin seeds, ajwain and ginger0garlic paste. Sauté.
  3. Add finely chopped onions, tomatoes and green chillis.
  4. Add all the dry spices and roast them well.
  5. Add this onion-tomato masala paste into the boiled chickpeas.
  6. Add tamarind paste to the chickpeas and cook for 5 minutes on a slow flame.
  7. Serve hot with bhature, poori or pulav.
