Avval/Poha is quiet often used for making upma, besides cooking the same with semolina in south India. It has all the ingredients of the upma and a variation in the form of using avval

Ingredients Serving: 4

  1. Cashews 4-5 chopped coarsely
  2. Curry leaves 2 sprigs
  3. Poha/Avval 2 cups
  4. Salt to taste
  5. 1.5 tsn turmeric powder
  6. 1.5 ts red chilli powder
  7. 1.5 ts coriander powder
  8. Juice of one lemon
  9. 1 medium carrot deskined and grated fine
  10. Handful of green peas boiled
  11. Handful of fresh chopped coriander leaves
  12. Dry red chillies 2 nos.
  13. 1 Tb urad daal
  14. 1 Tb toor daal
  15. Handful of raw peanuts with skin
  16. 1 Large Onion finely chopped
  17. 1 Tb ghee
  18. 2 tbn oil
  19. Mustard seeds 1 tb
  20. cumin seeds 1 Tb
  21. 2 Green chillies finely chopped

Instructions

  1. In a wok, add ghee and sauté the cashews till light brown. keep aside
  2. Next add oil and add dry red chilli, daals,mustard seeds,cumin seeds, curry leaves. Allow to splutter
  3. Add the onions, green chillies and peanuts. sauté till onions are translucent
  4. Add grated carrot and green peas. cook covered for 5-7 minutes till the veggies soften on Sim flame
  5. Next add the dry spices like turmeric, red chilli, coriander powders as mix well
  6. Add the avval at this stage and salt to taste. mix well
  7. Cook covered for 2-3 minutes
  8. Check seasoning and adjust at this stage if needed
  9. Add lemon juice and coriander leaves and mix well. Take off heat
  10. Serve hot/warm accompanied with plain/spicy coconut chutney according to your liking
