ABOUT Sewaiyan Upma... RECIPE

A super quick breakfast loaded with veggies and thin vermicelli. This particular Indian style breakfast is a very healthy one too with favourite veggies being added into it. Super yummy brunch idea too. Needs very few ingredients too. It can be done in a jiffy. Do not over cook the veggied in order to retain the crunch and the vitamin content in them.

Ingredients Serving: 4

  1. Vermicelli 400 gm
  2. Salt 1 tsp
  3. Garlic cloves 3
  4. Curry leaves 10-12
  5. Capsicum red and green mixed finely chopped 1 cup
  6. Spring onion finely chopped 1 cup
  7. Carrots finely chopped 1/2 cup
  8. Cauliflower chopped 1/2 cup
  9. Green peas 1/2 cup
  10. French beans finely chopped 1/2 cup
  11. Oil 3 tbsp
  12. Green chillies chopped 3
  13. OR
  14. Red chilli flakes 1 tbsp
  15. Coriander leaves finely chopped 1/4th cup
  16. Black mustard seeds 1 tsp
  17. Dry red chillies 3
  18. Turmeric 1/2 tsp

Instructions

  1. Heat oil in a cooking pot.
  2. Add mustard seeds and curry leaves.
  3. After they stop spluttering, add dry red chillies.
  4. Also add garlic mince to it.
  5. Saute all that for a minute.
  6. Add green chillies or red chilli flakes now.
  7. Add the finely chopped veggies now.
  8. Saute them on a medium flame and do not cook much.
  9. Cover and cook for 6 to 7 minutes until the raw smell disappears.
  10. Meanwhile bring 2 litres of water to a rolling boil.
  11. Add some salt to it and a teaspoon of oil.
  12. When the water boils vigorously, add the vermicelli.
  13. Stir in with a wooden spoon and be gentle.
  14. Cover and wait for about 2 minutes.
  15. Now drain this in a large colander.
  16. See that it drains well.
  17. Now add this vermicelli to the pot of veggies.
  18. Mix gently and simmer for about 3 minutes more.
  19. Garnish with coriander and serve hot.
