ABOUT Set Dosa/Dosai... RECIPE

A famous breakfast recipe from the State of Karnataka. Basically set dosa is little bit on the stout side and are not thin and crispy as the regular dosa. These are soft and spongy ones and are served across the tiffin centres and hotels in Bengaluru. The fermentation should be done well and this ensures that the dosas are spongy, porous and soft. Serve these with coconut chutney or onion tomato chutney as i did for melt in mouth super soft set dosas.

Ingredients Serving: 5

  1. Raw rice or dosa rice (Ponni rice) 2 cups
  2. Urad dal 1/2 cup
  3. Flattened rice 1 cup
  4. Fenugreek seeds 1 tsp
  5. Salt 1 tsp
  6. Oil or ghee to make dosas 1/2 cup

Instructions

  1. Soak rice, poha and dal separately.
  2. Soak fenugreek seeds along with the black gram or urad dal.
  3. Grind them separately using little water.
  4. Grind the batter to a thick paste.
  5. Add salt and leave to ferment it overnight.
  6. If the weather is cold, leave it to ferment well for 15 hours or so.
  7. Heat a non stick pan or an iron griddle.
  8. Pour one big ladleful of the batter onto it.
  9. Do not spread much.
  10. Just dab it on top and drizzle oil or ghee on top and also on the sides.
  11. Cover and cook for 2 minutes.
  12. The porous, spongy and soft set dosas are ready.
  13. Serve them hot with any chutney of choice.
