ABOUT PUFFED QUINOA KANDA POHA STYLE RECIPE

Poha is not available in Brazil. So I tried out puffed quinoa in the same way and it turned out very delicious.

Ingredients Serving: 2

  1. Puffed quinoa ... 3 cups
  2. Onion .............. 1 small (chopped finely)
  3. Green chillies ..... 1-2 (chopped finely)
  4. Crushed ginger ... 1/2 tsp (optional)
  5. Grated ginger ..... 1/2 tsp
  6. Turmeric powder .. 1/8 tsp
  7. Cumin powder ...... 1/4 tsp
  8. Coriander powder ... 1/4 tsp
  9. Salt ................. to taste
  10. Lemon juice .. 1 tbsp
  11. Coriander leaves ... handful
  12. Oil .. 3 tbsps
  13. (For tempering:)
  14. Mustard seeds ... 1/2 tsp
  15. Cumin seeds ..... 1/2 tsp
  16. Asafoetida ........ a pinch
  17. Curry leaves ...... few

Instructions

  1. Wash the puffed quinoa in a colander under running water. Set it aside.
  2. In a pan heat a little oil and add the tempering ingredients.
  3. When they crackle, add the chopped onion, garlic, ginger and green chillies. Saute for a minute or two and add all the dry spice powders and salt.
  4. Tip in the quinoa from the colander and mix gently.
  5. Squeeze a little lemon juice and garnish with coriander leaves.
  6. Serve hot.
