ABOUT Bihar Ka LITTI CHOKHA RECIPE

Despite being a Punjabi, I am a big fan of this Bihari dish. Always had it at a family friends place, prepared authentically under heat of cow dung. Today made it on my own in an electric tandoor. I will call it as Healthy as it has goodness of wholewheat, Sattu, brinjal, potato, tomatoes, herbs and just a brush of ghee on top.

Ingredients Serving: 3

  1. I. For Litti (12-14 in no.)
  2. Whole-wheat flour: 3 cups
  3. Warm Water to knead
  4. Salt to taste
  5. Oil for moin
  6. Ghee for brushing
  7. II. For Sattu Filling
  8. Mustard oil: 2 tsp
  9. Sattu: 1/2 cup
  10. Grated Ginger: 2 tsp
  11. Grated Garlic: 2tsp
  12. Chopped onion: 1 medium sized
  13. Green chilly: 2 finely chopped
  14. Salt to taste
  15. Red chilli powder: 1/4 tsp
  16. III. For Chokha
  17. Brinjal: 2 medium sized
  18. Tomatoes: 2 medium sized
  19. Whole Garlic clove: 4
  20. Green chilly: 4
  21. Boiled potatoes: 3
  22. Chopped Garlic: 2 tsp
  23. Chopped Ginger: 2 tsp
  24. Mustard oil: 2 tbsp
  25. Salt to taste
  26. Chopped green coriander: handful
  27. Lemon juice: 2 no

Instructions

  1. I. For Litti
  2. Take Wholewheat aata in a dry Bowl and knead little harder than chapati dough with little oil, salt and warm water.
  3. Keep aside covered till the time you prepare the filling.
  4. II. For Sattu Filling
  5. In a pan, heat 2 tsp mustard oil to smoking point. Switch off flame. Cool it down.
  6. Add 2 tbsp of grated ginger and garlic each.
  7. Just saute a little. Add chopped onion, green chillies, add satu.
  8. Roast everything together for 2-3 min. Add salt, red chilli powder
  9. Switch off flame. Cool down the mix.
  10. Assembly of Litti Balls
  11. Make litti by taking fist size balls and flaten in palms n fingers.
  12. Fill in sattu filling and twist, turn and roll down to balls.
  13. Preheat your electric tandoor on both top and bottom grill. You can opt for otg or convection micro.
  14. Grease mesh and place Litti in tandoor
  15. Turn it twice and when roasted well top it with a brush of ghee
  16. It took 8-10 min for 1 batch of litti.
  17. Take them out and keep them in a casserole and brush ghee to enhance flavours.
  18. III. For Chokha
  19. Roast 2 medium sized Brinjal with slits and add garlic and green chilli in slits.
  20. Once roasted, remove green chilly, garlic and put it in water
  21. Roast 2 med tomatoes and keep it in water
  22. Peel the burnt skin of tomatoes and brinjal thinly. Remove excess thick seeds and tops
  23. Chop Brinjal, tomatoes, roasted green chilly and garlic
  24. Put it in a bowl and mush everything along with boiled potatoes with clean hands
  25. Add more chopped ginger, garlic, green chilli ( according to what have been added in brinjal slits).
  26. Add 1 tbsp of mustard oil (cooled after reached smoking point).
  27. Add dash of lemon, coriander and salt.
  28. Chokha is ready
  29. Serve Chokha with Hot Littis, garlic chutney, mint chutney and mattha.
