Ingredients Serving: 2

  1. Rice : 1 cup
  2. Urad dal : 1/2 cup
  3. Red chillies : 2
  4. Coconut grated : 4 tsp
  5. Cumin seeds : 1/2 tsp
  6. Mustard seeds : 1/2 tsp
  7. Curry leaves
  8. salt
  9. Gingelly oil : 3 tsp

Instructions

  1. In a pressure cooker add rice , ulundhu , salt , 4 1/2 cup water and cook for 15 - 20 mins over medium flame.
  2. Heat oil in a pan, and add mustard, cumin seeds, red chillies.
  3. Let them crackle for a minute and add curry leaves
  4. Add grated coconut and keep saute for 1 min. Switch off the stove.
  5. Add the above mixture to the cooked rice and mix well.
  6. Serve with coconut thugayal
