Ingredients Serving: 2

  1. Basmati rice - 1 cup
  2. Carrot - 1 cut in julienne
  3. Chopped green chilly - 1
  4. Water - 2 cup
  5. Black mustard seeds/rai - 1/4 tsp
  6. Yellow urad dal - 1/2 tsp
  7. Bengal gram/chana dal - 1/2 tsp
  8. Whole red chilly - 1
  9. Curry leaves - 8 - 10
  10. Coriander leaves - 1 tbsp
  11. Cashew nuts - 8 - 10
  12. Asafoetida/hing - a pinch
  13. Salt - to taste
  14. Clarified butter - 2 tbsp

Instructions

  1. Heat clarified butter in a pan.
  2. Add cashew nuts and fry until golden brown and keep aside.
  3. Add black mustard seeds,yellow urad dal,chana dal,curry leaves,whole red chilly and asafoetida and fry till golden.
  4. Add green chilly,carrot and coriander leaves and mix well.
  5. Add two cup of water and salt.
  6. When water comes to boil add the soaked rice and sim the flame.
  7. Garnish with fried cashew nuts.
