Ingredients Serving: 5

  1. Chicken bone-in 400 gm
  2. Quick rolled oats 1 cup
  3. Butter 1 tbsp
  4. Water 1 1/2 litres
  5. Salt 1 tsp
  6. Soy sauce 1 tbsp
  7. Chilli garlic sauce 1 tbsp
  8. Garlic mince 1 tsp
  9. Spring onion greens 1 cup
  10. Carrots finely chopped 1/2 cup
  11. Green peas 1/2 cup
  12. Sweet corn kernels 1/2 cup
  13. Blackpepper 1 tsp
  14. Coriander or parsley chopped 1/4th cup

Instructions

  1. In a cooking pot, heat butter on a low flame.
  2. Saute the garlic mince.
  3. Add all the veggies to it.
  4. Also add the chicken and the chilli garlic sauce.
  5. Saute all for 2 minutes and then add the oats.
  6. Stir fry the oats for a minute and add enough water.
  7. Simmer on low to medium flame and add more water if required.
  8. After 25 minutes of simmering, remove the chicken and shred it. Discard the bones.
  9. Do not cook much because the chicken will be too mushy and soft. The soup should retain the crunch of the veggies and the chicken should be succulent yet firm.
  10. Add it back to the simmering soup and add blackpepper and salt.
  11. Also add vinegar if desired.
  12. Adjust salt and pepper according to taste.
  13. Simmer for 5 more minutes until a desired thickness is reached.
  14. Serve hot garnished with chopped coriander.
