Ingredients to make Tangy twisty karela

  • Karela [bitter gourds] - 5 to 6 nos
  • onion- 1 big roughly chopped
  • ginger - 1 tsp chopped
  • garlic- 4 cloves choped
  • green chillies- 4 to 5 chopped
  • mustard seeds- quarter spoon
  • curry leaves- handful
  • coriander powder- 2 tsp
  • Haldi [turmeric powder] - quarter tsp
  • cumin Powder- 1 tsp
  • Saunf [fennel] powder- 1.5 tsp
  • red chilli powder- 1.5 tsp
  • amchur powder- 2 to 3 tsp
  • salt as per taste
  • oil

How to make Tangy twisty karela

  1. Wash karelas , Pat them dry and cut into round shapes. Put oil in a pan and fry them. You can deep fry them to make it crisp. But i did shallow frying in a little bit of oil. Remove when brown spots appear on both sides.
  2. Heat oil in the same pan. Put mustard seeds. Once they crackle, fry curry leaves in it, then put onion, ginger, garlic, green chilli. Fry them till onions turn pink.
  3. Put all dry masalas now. Fry fir a min. Now add all the karelas. Toss it so that karelas are coated with masala. Cook for 3 to 4 mins. Taste for salt and tanginess. Adjust salt if needed. I added a little pani Puri masala for extra tanginess.
  4. Garnish with coriander leaves & serve hot with roti/ dal and rice.

So awesome. Delicious, can't imagine that karela ki itni achhi dish bhi banti hai. I tried it , l don't like karela before it .but now karela has changed (twisted ) mood of my family.
