Ingredients to make Vada Pav

  • 2 tbsp green chutney
  • 2 tbsp garlic chutney
  • 2 potatoes boiled
  • 3 garlic, finely chopped
  • 1 tsp lemon juice
  • salt to taste
  • 1/2 tsp mustard seeds
  • Few coriander leaves
  • Few curry leaves
  • Pinch of asafoetida
  • 1/2 tsp turmeric powder
  • For batter...
  • 1 cup gram flour
  • salt to taste
  • water as required
  • Pinch of asafoetida
  • 1/2 tsp turmeric powder
  • 1/2 tsp chilli powder
  • A pinch of baking soda

How to make Vada Pav

  1. HEAT 2 TBSP OIL, ADD 1/2 TSP EACH OF MUSTARD & CORIANDER SEEDS, 1/4 TSP ASAFOETIDA
  2. ADD 3 CHOPPED GARLIC CLOVES, 2 GREEN CHILLIES, FEW CURRY LEAVES
  3. ADD 1/4 TSP TURMERIC POWDER, ADD 2 BOILED, MASHED POTATOES
  4. MIX WELL
  5. ADD SALT TO TASTE, 1 TSP LEMON JUICE, 1/4 CUP CORIANDER LEAVES, MIX & TAKE OFF HEAT
  6. LET THE MASALA COOL
  7. MIX 1 CUP GRAM FLOUR, A PINCH EACH OF ASAFOETIDA & BAKING SODA, 1/4 TSP RED CHILLI
  8. ADD 1/4 TSP TURMERIC POWDER, SALT TO TASTE.
  9. MIX & ADD WATER
  10. MAKE A THICK, SMOOTH BATTER
  11. MAKE BALLS OF THE POTATO MIX
  12. DIP & COAT THEM WITH THE BATTER
  13. GENTLY DROP THEM INTO HOT OIL
  14. FLIP & COOK ON BOTH SIDES
  15. REMOVE FROM HEAT WHEN GOLDEN BROWN & CRISP
  16. FRY SOME GREEN CHILLIES TILL CRISP
  17. SLIT THE PAV LIKE THIS
  18. SPREAD THE DRY GARLIC CHUTNEY ON ONE SIDE, ADD GREEN CHUTNEY ON THE OTHER SIDE
  19. PLACE A VADA IN BETWEEN WITH A FRIED CHILLI
