Egg bhurji dosa

Ingredients to make Egg bhurji dosa

  • For dosa batter:
  • urad dal - 1 cup
  • rice - 1 1/2 cups
  • methi seeds - 1 tsp
  • water sufficient to soak
  • For the egg bhurji:
  • eggs - 8
  • onion - 2
  • Tomatoe - 1
  • ginger garlic paste - 1 tsp
  • Garam masala powder - 1 tsp
  • salt to taste
  • red chilli powder - 1 tsp
  • turmeric - 1 tsp
  • mustard seeds - 1/2 tsp
  • cumin - 1/2 tsp
  • oil

How to make Egg bhurji dosa

  1. Soak the dal, rice alongwith methi seeds for 2 hours in a big vessel with sufficient water
  2. Grind with water to a smooth batter. Add salt and mix well
  3. Add 3tbsp oil to a deep sauce pan. Add mustard seeds, jeera and let it splutter.
  4. Add the chopped onions and fry with a pinch of salt, add ginger garlic paste and saute till the raw smell goes away.
  5. Now add the tomatoes and spice powders. Saute and cover till mushy.
  6. Open break eggs into it. Mix well with a laddle. Add salt and mix. Cover and open in minute intervals.
  7. Mix again. Do till water or moisture in it dries off.
  8. Keep a dosa pan to heat with a tsp of oil applied all over.
  9. Sprinkle water with hand to adjust the heat. Pour a laddle of batter and spread. Spread 2 to 3 tbsps of egg bhurji on it. Let dosa roast a bit
  10. Fold and remove
  11. Serve hot with or without sambar. Just tastes great.
