Brinjal Tava Fry

Ingredients to make Brinjal Tava Fry

  • Eggplant- 1 ( 300 – 350 gms)
  • mustard Oil- 4 to 5 tbsp
  • chickpea flour- 2 tbsp
  • Green coriander- 2 to 3 tbsp (finely chopped)
  • Green Chili- 1 (finely chopped)
  • ginger Paste – ½ tsp
  • asafoetida- ½ pinch
  • cumin Powder- ½ tsp
  • Dry mango powder- ¼ tsp
  • coriander Powder- 1 tsp
  • Garam masala - ¼ tsp
  • turmeric Powder- ¼ tsp
  • Red chili powder- ¼ tsp
  • turmeric Powder- ¼ tsp
  • salt- 1 tsp ( or to taste )

How to make Brinjal Tava Fry

  1. Take 3 tbsp gram flour and 1/4 tsp turmeric powder.
  2. Add 1 tsp salt, 1/4 tsp garam masala, 1/2 tsp cumin powder and 1/4 tsp asafoetida powder.
  3. Add 1/2 tsp red chilli, 1 tsp coriander, 1/4 tsp amchur powder, 1 green chilli and 3 tbsp coriander.
  4. Mix well.
  5. Remove stalks from 250 gms brinjal and cut into 1/2-3/4 cms thick rounds.
  6. Coat each round with the masala mix. Keep aside for 2 mins.
  7. Heat 3-4 tbsp oil in a pan.
  8. Shallow-fry the brinjal on low heat.
  9. Flip and cook till golden brown on both sides.
  10. Remove from heat when crisp. Serve.
