ABOUT Baigan fry RECIPE

A tasty accompaniment for sambar rice or dal rice.Its an easy and quick side dish made with purple brinjal.

Ingredients Serving: 2

  1. Oil -5 teaspoon
  2. Mustard seeds - 1 teasoon
  3. Curry leaves
  4. Hing
  5. Shallots - 5 nos
  6. Garlic -- 8 to 9 pods
  7. Brinjal -10 nos
  8. Salt - as needed
  9. Red chilly powder - 2 teaspoon

Instructions

  1. Chop shallots and smash garlic . Set aside.
  2. Cube brinjals and set aside.
  3. Take a pan and add oil into it.
  4. Add mustard seeds, when it splutters add curry leaves and hing.
  5. Add shallots and garlic , saute them till shallots turn translucent.
  6. Add brinjal and saute well till it gets cooked.
  7. Add salt , red chilly powder. Mix it well. Serve hot with dal rice or sambar rice or chapathi.
