ABOUT ZUNKA BHAKRI RECIPE

A rustic traditional recipe from the state of Maharashtra. The best part is its easy to cook & so yummy to taste. You just cant resist.

Ingredients Serving: 4

  1. 150 grams Chickpea flour / Besan
  2. 1 large onion, finely chopped
  3. 1 cup fresh coriander, finely chopped
  4. 4-5 tablespoon oil
  5. 5-6 garlic cloves, finely chopped
  6. 1 inch ginger, finely chopped
  7. 2-3 green chilli, chopped
  8. 1/2 teaspoon mustard seeds
  9. 1 teaspoon cumin seeds
  10. 1/4 teaspoon hing/asafetida
  11. 1/2 teaspoon haldi/ turmeric powder
  12. 1 teaspoon garam masala
  13. Salt to taste
  14. 1/4 cup water
  15. For Bhakri
  16. 2 cup millet flour/jawari atta
  17. Water as required, to knead the dough

Instructions

  1. Heat 5 tablespoon oil in a pan
  2. Add mustard seeds and allow it to crackle
  3. Then add cumin seeds. Let these crackle. Add hing
  4. Next add the chopped ginger, garlic & green chilli. Saute for 30 seconds
  5. Add the chopped coriander
  6. And onions. Saute till onions turn transluscent
  7. When the onions are done, add turmeric powder.
  8. Next goes the garam masala powder & salt.
  9. Add the besan & roast it on a low flame.
  10. Mash with the back of the spoon to break lumps,if any. Roasting the besan completely takes 7-8 minutes.
  11. Now sprinkle 1/4 cup if water over the roasted besan. Mix it well.
  12. Cover the pan and cook for 3-4 minutes.
  13. When cooked completely, serve with Jawari bhakri.
  14. FOR BHAKRI Knead a soft dough of jawari flour using water. Rest the dough for 10 minutes.
  15. Divide the dough into 4 equal balls.
  16. Sprinkle a good amount of jawari flour on the rolling board. flatten a ball and place it on the flour. Add some more flour on top.
  17. With your palms, lightly press as well as rotate the roti. add more flour if required.
  18. You can also flatten the dough ball on a moist napkin, or by placing the dough ball between ziplock bag or butter paper
  19. Carefully place jowar roti on a hot tava with the floured side facing up.
  20. Let the base cook half and then flip the roti with help of a spatula
  21. Cook the other side completely, till light brown spots start appearing.
  22. Now with the help of tongs, place the half cooked side on fire and let the roti puff.
  23. Flip and roast the other side till the light brown spots turn black.
  24. Serve with zunka & thecha or any other veg or non veg curry.
