Ingredients Serving: 6

  1. For kadhi:
  2. 2 cups curd
  3. 2.5 cups water
  4. 2 tbsp besan/gram flour
  5. Salt to taste
  6. 1/2 tsp red chili powder
  7. 1/4 tsp turmeric powder
  8. 1/2 tsp coriander powder
  9. 2 tsp oil
  10. 1/4 tsp mustard seeds
  11. 1/4 tsp cumin seeds
  12. 1/4 tsp Fenugreek seeds
  13. 4-5 cloves
  14. 1 bayleaf
  15. 4-5 Curry Leaves
  16. 1/4 Tsp Asafoetida
  17. for pakodi:
  18. 2 tbsp chopped mixed nuts (cashews, almonds and raisins)
  19. 5 tbsp besan/gram flour
  20. Salt
  21. 1/4 tsp red chili powder
  22. 1/4 tsp garam masala powder
  23. 1/4 tsp sugar
  24. 1 tsp oil
  25. Water as required
  26. Oil for frying
  27. For Tadka:
  28. 1 tsp ghee
  29. 1 bayleaf
  30. Pinch of Asafoetida
  31. Pinch of Red chili powder
  32. 1 tsp chopped almonds

Instructions

  1. for pakodi:
  2. firstly, take mixed nuts in a bowl
  3. add besan, salt, red chili powder, garam masala powder and sugar
  4. now add water and make a thick batter
  5. add 1 tsp oil and mix well
  6. make small balls and deep fry the pakodis
  7. once turned golden brown, drain and keep aside
  8. for kadhi:
  9. firstly, in a large mixing bowl take curd and besan
  10. add turmeric powder, salt, red chili powder, coriander powder and mix it properly
  11. add water, whisk and keep aside
  12. heat oil in a pan and temper mustard, fenugreek seeds, bayleaf, cloves, curry leaves and asafoetida
  13. now add prepared curd-besan mixture and stir well
  14. bring the kadhi to boil, stirring continuously
  15. after the kadhi has come to a boil, lower the flame and simmer the kadhi for more 10 minutes
  16. now add pakodis, stir gently and cook for more 1-2 minutes
  17. transfer the prepared kadhi into a serving bowl
  18. tempering:
  19. heat ghee in a small pan, when ghee is medium hot enough switch off the flame
  20. add bayleaf, asafoetida, red chili powder and chopped almonds
  21. immediately pout it over the prepared kadhi and serve hot with steamed rice
