Bharwa masala baigan

Ingredients to make Bharwa masala baigan

  • 5 to 6 long purple brinjals
  • 1/2cup peanut
  • 1 tbsp sesame seeds
  • 2 tsp red chilli powder
  • 1 tsp turmeric powder
  • 2 tsp coriander powder
  • 2 tsp Garam masala powder
  • 2 green chillies chopped
  • 5 to 6 cloves garlic
  • 1 inch ginger
  • A handful coriander leaves
  • 1 spring curry leaves
  • 1 pinch hing
  • salt to taste
  • 1 dried red chilli

How to make Bharwa masala baigan

  1. Wash the brinjals and slit till the tip of it
  2. In a grinder add red chilli powder turmeric, ginger, garlic , green chillies, coriander powder, coriander leaves, garam masala, salt into a paste adding little water
  3. Apply this paste as stuffing to brinjals
  4. Heat oil in pan. Add hing, dried red chilli, and curry leaves. Onve they splutter add the stuffed brinjals. On a low flame let it fry.
  5. In meanwhile add peanuts and sesame in grinder. Powder it.
  6. Once the brinjals are cooked add peanut and sesame powder. Mix well. Add the remaining stuffing masala. Mix
  7. Cook for 5 to 6 min
  8. Add coriander leaves and serve hot
