Adrak wali chai or Ginger tea is one of the most beloved version of tea in India. It is a strong concoction of ginger, tea, sugar and milk. We Indians love to have chai/tea at any time; all day every day. The internet is flooded with “n” number of adrak wali chai recipes but believe me no tea tastes the same. It depends on various factors like the quantity of milk, water, whether you use a tea leaf or tea dust, the duration you boil the tea or even when you add the sugar.
Bring water to a boil with crushed ginger; this helps in infusing the ginger flavor well.
Add tea leaves and continue to simmer for 5 to 6 minutes. Then add milk and sugar; simmer it for 2 to 3 minutes.
Now bring the concoction to a boil and remove it from the flame. Let the tea sit for 1 minute.
Strain the adrak wali chai into a tea cup and enjoy it with garama garam pakoras, chivda or some biscuits.
