Ingredients Serving: 10

  1. 1 cup almonds,
  2. 2 cups milk for soaking almonds
  3. 2 tbsp milk for soaking saffron
  4. 1/2 cup condensed milk
  5. 2-3 cardamom crushed
  6. 4-5 tbsp ghee
  7. 2 drops yellow food colour
  8. 10-strands of saffron + 4-5 strands for garnishing
  9. Few almonds and pistachios for garnishing


  1. Soak the saffron in 2 tbsp of warm milk and set aside.
  2. Blanch the almonds in 2 cups of milk and use the milk for grinding the almonds.
  3. Using a blender or mixie,grind the almonds and milk together into a fine thick paste.
  4. Take a non stick pan, melt of ghee in it and then add the grinded almond paste and keep stirring continuously.
  5. After 2 minutes,add the saffron along with the milk and mix well,stir continuously.
  6. Once the mixture thickens, add the condensed milk.
  7. Melt the remaining 3 tbsp ghee separately in pan and then add the hot ghee little by little into the badam mix,keep stirring.
  8. Add the food color,crushed cardamom,mix well.Then again stir for another 5-7 mins, making sure it doesn’t stick to the bottom.
  9. Once the ghee oozes out and the bottom turning to crisp.Switch off the gas.
  10. Pour this mixture in a greased plate. Level the barfi all over and let it set and cool down.
  11. Cut into any shape of your choice and garnish with pistachios.
