ABOUT YAM FRY WITH METHI LEAVES RECIPE

Yam and methi, two super foods! Yam is a store house of health. Its complex carbohydrates help maintain the glycemic levels so it’s a recommended food for diabetics. Its soluble dietary fibre helps handle constipation and lower LDL or bad cholesterol and reduce incidences of colon cancer. It is loaded with vitamin B, vitamin C, vitamin A and beta carotene – essential anti-oxidants. It is also an excellent source of trace minerals. Methi too has similar such health benefits and well documented. When yam and methi is fried in low oil, it is crunchy and yummy and children and adults would both love. Ingredients Serving: 4

  1. Oil 2 tbsp
  2. Urad dal 1 tsp
  3. Mustard seeds ½ tsp
  4. Cumin seeds ½ tsp
  5. Fenugreek seeds 1/8 tsp
  6. Dry red chillies 2
  7. Curry leaves few
  8. Onions 2 cups
  9. Yam 300 gms peeled, chopped into 1 inch size
  10. Turmeric powder ¼ tsp
  11. Salt 1 tsp
  12. COCONUT POWDER :
  13. Dry coconut pieces 2 tbsp
  14. Garlic cloves 8
  15. Red chilli powder 1 ½ tsp

Instructions

  1. Heat 2 tablespoon oil in a pan and add urad dal, mustard seeds, cumin seeds, fenugreek seeds, red chillies, curry leaves and sauté them for a minute.
  2. Now, add chopped onions and fry them till they are glossy and transparent then add cubed yam pieces, turmeric powder and salt to taste. Mix well and close the lid and cook for 5 minutes on low flame.
  3. In the meanwhile, grind dry coconut pieces, garlic cloves, red chilli powder.
  4. Check if the yam is cooked soft and tender, now add methi – fenugreek leaves and mix well. Mix the ground spicy coconut powder once the methi leaves lose their raw appearance and odour.
  5. Cook again for 5 minutes on low flame. Tasty and yummy yam methi fry is ready.
