About Bhaji masala gravy Recipe

A mixture of mashed vegetables in a thick gravy served hot with a soft white bread roll, usually cooked on a tawa. But in this recipe I have used wak instead of tawa.

Bhaji masala gravy

Ingredients to make Bhaji masala gravy

  • Frozen mixed vegetables chopped : 1/2 kg
  • potatoes chopped : 3
  • capsicum : 2 chopped
  • water : 3 cups
  • onion : 2 chopped
  • tomato puree : 2 cup
  • Thai red curry paste : 1 tbsp
  • jeera : 1 tsp
  • Dry red chilli : 1 crushed
  • curry leaves : 1 spring
  • red chilli powder to taste
  • Garam masala powder to taste
  • coriander powder to taste
  • salt to taste
  • turmeric powder : pinch
  • Kasuri methi : 1 tsp
  • Pav bhaji masala : 2 tsp
  • Degi mirch : 2 tsp or to taste
  • butter : 3 tbsp
  • R.oil : 2 tbsp
  • lemon juice : 1 tbsp or to taste
  • coriander leaves : 1/2 cup

How to make Bhaji masala gravy

  1. Take chopped frozen vegetables in pressure cooker and add water and 1/2 tsp salt. Mix and close the cooker and steam for 2-3 whistles on high switch off the gas. Let it cool. Mash the boiled vegetables and keep aside.
  2. Heat butter and oil in kadai. Add jeera, dry red chilli, curry leaves and let it splutter for a min. Add onions and cook till golden brown. Add tomato puree and cook till raw smell is gone.
  3. Add thai red curry paste and mix. Add salt, turmeric powder, red chilli powder, garam masala powder, coriander powder, kasuri methi, pav bhaji masala and degi mirch. Mix well.
  4. Now add mashed vegetables in the thick gravy. Mix well. Add lemon juice and butter mix well. Switch off the gas and garnish with coriander leaves.
  5. Bhaji masala gravy is ready to eat. Serve hot with pav.
