ABOUT Beetroot Barfi RECIPE

Beets reduce dementia risk. Beets produce nitric acid, which helps increase blood flow throughout your body, including to your brain. · Beets are high in immune-boosting vitamin C, fiber, and essential minerals like potassium and manganese which regulates our nerves and kidneys . Beets also contain the B vitamin folate, which helps reduce the risk of birth defects. kids should be fed beets for stronger immunity and good blood supply . it also relieves constipation . This Beetroot barfi is one easiest smartest way to feed beets to kids . In this recipe , I had used palm candies to replace sugar . This makes this Beetroot barfis super healthy .

Ingredients Serving: 10

  1. Three medium Beetroots grated finely . ( Don’t make it too mushy and watery )
  2. Ghee 3 tablespoon
  3. Cardamom powder 1 teaspoon
  4. Grated coconut equal cup .
  5. Palm candies 1.5 cup

Instructions

  1. Heat ghee in a wide nonstick / ceramic pan .
  2. Add the grated beets and sauté till the raw smell leaves . Do this under low flame so that the beets wouldn’t burn and turn darker .
  3. Now add the grated coconuts and sauté for two to three minutes till the Beetroot and coconut blends together .
  4. Add the palm candies . Palm candies doesn’t melt quick like sugar , so maintain a low flame and keep stirring continuously till the palm candies dissolve . You can also powder the palm candies coarsely in a grinder and use that too . Add the cardamom powder to the pan .
  5. Palm candies melt and the Beetroot carrot mixture would turn watery . Now keep stirring continuously and cook till the water evaporates completely . At this stage. you could see the barfi leaving the pan easily and not sticking to the pan .
  6. This is the consistency .
  7. Grease a tray with little ghee and pour this barfi to the tray . Level it using a flat spoon / spatula .
  8. Don’t disturb this when hot . Cut the barfis into desired shapes once it turns warm . Dont cool completely and cut . The barfis would turn firm and you wouldn’t be able to cut into shapes as the firmed barfis would break .
  9. Beetroot barfis are ready . Store it an airtight container box for retaining its freshness for about a week ‘s time . When refrigerated , it stays food for about three weeks .
