Legendary Raan Bhori style

Ingredients to make Legendary Raan Bhori style

  • 1 mutton leg around 1 kg
  • Marination
  • Ginggarlic paste 5 tbsp
  • salt to taste
  • pepper to taste
  • 3 to 4 green chillies
  • For gravy
  • 5 onions sliced and fried golden brown
  • Handful of cashews tawa roasted
  • 3 tbsp whole dhania tawa roasted
  • 6 to 8 red chillies tawa roasted and soaked in water
  • 2 onions chopped
  • 2 tomatoes chopped
  • 2 to 3 green chillies

How to make Legendary Raan Bhori style

  1. Take the mutton shank wash clean and put slits on it
  2. Marinate the shank with salt pepper Ginger garlic paste and slit green chillies and leave it over night
  3. After it is marinated braise the mutton shank on high heat in pure ghee on both sides till it is brown
  4. Then boil the shank for 30 minutes with water ,salt ,pepper, onions and tomatoes
  5. Take the kaju , onion birista,whole dhania ,red chillies and the onion and tomatoes which we used in boiling.
  6. Grind the masala to a fine paste.Use the stock if water is needed.
  7. Apply the paste on both sides
  8. Seal in foil and bake the shank in a preheated oven at 180 D Celsius for 35 to 40 mins
  9. Garnish with sliced onions,fresh mint leaves,boiled eggs,tomatoes and lemon

My Tip:

Braising the shank is very important.Choose a baby shank.
