Today i am introducing marwari cusine apart from gatta,daal baati,saangri there are much more in marwari cusine.people should try these recipes also.

Marwari thali

Ingredients to make Marwari thali

  • Kakardia guar fali ki subji----
  • 1 kakardia
  • 1 cup fali
  • 3 tbsp oil
  • 1 tsp jeera
  • Pinch of hing
  • salt as per taste
  • 1/2 tsp haldi
  • 1 tsp red chilli powder
  • 2 tsp coriander powder
  • 1 tsp amchur powder
  • 2 tbsp sugar
  • 1 lemon Juice
  • coriander leaves
  • water as per required
  • Pyaazpati ki subji----
  • 3 cup pyaazpati
  • 1 chopped tomato
  • 2 tsp oil
  • 1 tsp jeera
  • salt as per taste
  • 1/2 tsp haldi
  • 1 tsp red chilli powder
  • 2 tsp coriander powder
  • 1 tsp amchur powder
  • Kachari aur lahsun ki chutney---
  • 7 -8 dry red chillies
  • 8-10 lahsun ki kaliyan
  • 1 tomato
  • 2 tbsp oil
  • 1 tsp jeera
  • salt as per taste
  • 1/2 tsp haldi
  • 1 tsp red chilli powder
  • 2 tsp coriander powder
  • 1 tbsp kaachri
  • mirchi ki subji----
  • 4-5 green chillies
  • 2 tsp oil
  • 1 tsp Rai
  • 1 tsp jeera
  • Pinch of hing
  • salt as per taste
  • 1/2 tspp haldi
  • 1 tsp red chilli powder
  • 2 tsp coriander powder
  • 1 tsp amchur powder
  • 1 tsp fennel powder
  • Baajri ki roti---
  • 1 cup baajri ka aata
  • 1 tsp salt
  • water as required
  • ghee for roti
  • Mauth ki roti---
  • 1/2 cup besan
  • 1/2 cup mouth daal flour/moong daal flour
  • 2 tbsp curd
  • 1 tbsp oil
  • salt as per taste
  • 1/2 tsp carrom seeds
  • water as per required
  • Kaala papad(urad daal ke chhilkon se bane)
  • curd and salad
  • Bhujiya
  • Kulfi--
  • 2 CUP MILK
  • 1 tsp milk powder
  • 100 gram milkmaid
  • sugar as required
  • 4-5 sprigs of saffron soak in milk
  • 1 tsp cardmon powder
  • 1 tbsp chop mix nuts

How to make Marwari thali

  1. Kaakria fali ki subji----
  2. Chop both vegetables
  3. Boil in cooker ,give one whistle
  4. Heat oil add jeera and hing
  5. Add both vegetables
  6. And spices
  7. Add sugar and cook till all mix with each other
  8. Then add lemon juice and coriander leaves
  9. Pyaaz pati ki subji----
  10. Heat oil and add jeera
  11. Wash pyaaz pati and add in oil
  12. Add all spices and mix finely
  13. Don't cook too much
  14. Kaachuri lahsun ki chutney---
  15. Remove seeds from chillies and soak them in water for some time
  16. Add lahsun red chillies and tomato in mixi
  17. Make a ppaste
  18. Heat oil add jeera
  19. Then add lahsun mirchi paste and roast it
  20. Add spices and roast them also
  21. Then add water and cook
  22. As it leaves oil add kaachuri and mix
  23. Mirchi ki subji----
  24. Chop green chillies and wash them
  25. Remove seeds
  26. Heat oil
  27. Add jeera,rai and hing
  28. Add mirchi and cook a little
  29. Then add all spices and mix
  30. Don't add water then you can eat it 4-5 days keeping in freeze
  31. Baajrii ki roti--
  32. Add baajri flour,salt and water as required and make dough
  33. Take a plastic sheet and sprinkle some dry flour on it
  34. Take dough and spread it with fingers evenly
  35. Set edges with fingers and carefully put on tawa
  36. Cook from one side
  37. And flip cook from other side
  38. Now cook directly on gas
  39. Apply ghee and serve
  40. For mauth ki roti---
  41. Take all flour add salt
  42. Add curd and oil
  43. Add carrom seeds
  44. Make a dough with water
  45. Keep it covered for some time
  46. Then roll it and cook from both sides
  47. Apply ghee and serve
  48. Baajri ki roti ko ghee mein chur kar mix in kaakria fali subji and mirchi ki subji
  49. Kulfi---
  50. Heat milk
  51. Add milk powder in 1 tbsp cold milk and mix finely
  52. Add milkmaid and sugar in milk
  53. Soak saffron in lukewarm milk
  54. When milk become thick add saffron,nuts and cardmon powder
  55. Set in freeze in a airtight box or kulfi mould
  56. Serve roti subji with curd,kachumber salad
  57. We use to serve bhujiya also
  58. Avoid rice because already this meal is too heavy
  59. I serve black papad with ghee and red chilli powder upon it
  60. Serve kulfi after lunch

My Tip:

We use to eat baajri roti with kaakaria fali ki subji and mauth roti with pyaaz pati and lahsun ki chutney.
