Falhari Thali : Consisting Falhari Dum Aloo, Khatta Meetha Kumra and Rajgir Ke Atte Ki Poori.

Ingredients Serving: 1

  1. For Dum Aloo:
  2. 500 gms baby potatoes boiled and peeled
  3. 4 freshly grind tomatoes along with 4 green chillies and 1 inch ginger piece
  4. 1 tbsp kaju and magaz ka paste
  5. 1/2 tsp red chilly powder
  6. 1 tsp dhania powder
  7. 1 tsp jeera
  8. 2 cloves
  9. 1 piece cinnamon
  10. 1 tbsp oil
  11. Sendha namak as per taste for gravy
  12. 1 cup water
  13. For Marination:
  14. 2 tbsp hung curd
  15. 1 tsp kasoori methi
  16. 1 tsp oil
  17. 1 tsp red chilly powder
  18. 1 tsp dhania powder
  19. 1 tsp green chilly ginger paste
  20. Sendha namak as per taste
  21. For Khatta Meetha Kumra :
  22. 1 piece whole kachcha kumra
  23. 3 green chillies finely chopped
  24. 1 tsp oil
  25. 1 tsp jeera
  26. 2 cloves
  27. 1 tbsp red chilly powder
  28. 2 tbsp dhania powder
  29. 1 tbsp amchur powder
  30. 2 tbsp sugar
  31. Sendha namak as per taste
  32. For Rajgir And Kuttu Poori:
  33. 1 cup rajgir atta
  34. 1/4 cup kuttu atta
  35. 1/2 cup boiled and grated potatoes
  36. Salt to taste
  37. Some water
  38. Oil for deep frying

Instructions

  1. For Dum Aloo: Mix all the marination ingredients together nicely and add boiled potatoes . Mix well and keep for 3-4 hours for marination. After 3-4 hours put the marinated potatoes in a micro safe bowl and micro for 5-6 min . Cook until all the moisture evaporates , it may take 7 min also ,depending upon the microwave.
  2. For Gravy: Heat oil in a pan ,add jeera ,cloves and cinnamon , let them splutter , then add red chilly powder and dhania powder ,saute for a while then add grind tomatoes mixture . Cook on low heat till the oil comes out , then add kaju and magaz ka paste , stir well.
  3. Then add salt and ready potatoes , mix well and cook for 5-7 min. Now add water and mix well and cover and cook for 5-7 min more .Here add some chopped coriander. Dum aloo is ready to serve.
  4. For Khatta Meetha Kumra: Cut the kumra in small dices along with the peel. Now heat oil in a pan , put jeera and cloves and then add diced kumra. Add salt and cover and cook on low heat until becomes soft but not mushy.
  5. Then add red chilly powder ,dhania powder and amchur powder ,mix well and let it cook for 5 min.Now add sugar and cook for 5 min further. Kumra is ready to serve.
  6. For Rajgir And Kuttu Poori: Mix all the ingredients except water . Now knead a medium tight dough sprinkling some water . Keep for 10 min for resting and then grease your palm and knead the dough nicely .
  7. Make small balls and roll them . Heat oil on high heat and fry the pooris till brown and crisp. Pooris are ready to serve.
  8. Pooris can be made with kuttu atta ,singhara atta and rajgir atta separately also.

what is kumara? please post a pic of it,is it local veg,or fruit?
