ABOUT Pomogranate layered cheese cake RECIPE

It's a no bake layered cheese cake without sugar and cheese.

Ingredients Serving: 3

  1. For base-
  2. Dates 1/2cup de-seeded
  3. Almonds 1/2cup soaked and drained
  4. Oats 1/2cup roasted and powdered
  5. Salt a pinch
  6. For filling -
  7. Kaju 1cup
  8. Coconut milk less than 1/4cup
  9. Vanilla essence 1tsp
  10. Honey 4tbsp
  11. DessicatedCoconut 2tsp
  12. For topping -
  13. Pomogranate seeds 2cups
  14. Honey 2tbsp
  15. Lemon juice 1 tsp

Instructions

  1. For Base- Blend Almonds and soaked drained dates to a coarse mixture.
  2. Add powdered oats, salt and blend again.
  3. Place cling wraps to the muffin moulds. Place 1/2tbsp of the prepared mixture and press gently. Fill till 1/4th level.
  4. Put the moulds in the freezer for 30mins to 1hour or till sets.
  5. For filling - Prepare the filling by grinding kaju, coconut milk, honey, dessicated coconut, vanilla essence to a smooth paste.
  6. Take out the muffin moulds and pour the paste till 3/4th level and again put in freezer till topping is ready.
  7. For topping- Blend pomogranate seeds without water, strain and discard the residue.
  8. Heat a pan, add the strained pomogranate puree, honey, lemon juice. Cook till thick, like jam, stir continuously. Switch off.
  9. Pour the prepared pomogranate sauce over the kaju layer and fill completely.
  10. Put in freezer for 4/5hours.
  11. Then take out, remove the wrap and serve cold.
