About Kaju matar makhana Recipe

Kaju matar makhana is a rich dry fruits curry for special occasions, served with chapatis.

Kaju matar makhana

Ingredients to make Kaju matar makhana

  • tomatoes 2
  • Green chilies 2
  • oil 1 tbsp
  • ghee 2 tesp
  • star anise 1
  • clove 1
  • cinnamon 1"
  • salt 3/4 tesp
  • red chilli powder 1/2 tesp
  • Garam masala 3/4 tesp
  • cream/malai 2 tbsp
  • cashews 1/3 cup
  • Makhana/ foxnut 1/2 cup
  • Boiled peas 1/4 cup
  • Kasoori methi 1 tesp
  • Green coriander leaves 1 tbsp

How to make Kaju matar makhana

  1. Roast both cashews and foxnut/makhana in 1 tesp ghee each separately and keep aside.
  2. Grind tomatoes, green chilies and ginger together.
  3. Heat oil in a pan and saute clove, star anise and cinnamon.
  4. Add tomato puree, salt and red chilli powder. Cook until oil oozes out.
  5. Add cream/ malai and cook on medium heat for about a minute.
  6. Add 1 cup of water. Give a boil.
  7. Add roasted cashews , foxnuts and boiled peas.
  8. Add crushed Kasoori methi and simmer for 4-5 minutes.
  9. Add chopped green coriander leaves and stop heat.
  10. Serve hot with chapatis.

My Tip:

This recipe can be used for fasting by skipping peas.
