About Jackfruit Upside Down Caramel Cake Recipe

Come summers, and the market is filled with the sweet fragrant ripe jackfruits. Sometimes so tempting, that you end up buying them even when you haven’t planned to get it. Here’s a spongy, upside down cake made with this lovely fruit

Jackfruit Upside Down Caramel Cake

Ingredients to make Jackfruit Upside Down Caramel Cake

  • For topping :
  • 150 gm desseded finely chopped ripe jackfruit pieces
  • For Caramel sauce:
  • 100 gm brown sugar
  • 70 gm unsalted butter
  • 4-5 tbspn water
  • Cake batter:
  • 150 gm all purpose flour
  • 1 tspn baking powder
  • 1/2 tspn vanilla essence
  • A pinch of salt
  • 2 eggs
  • 120 gm softened unsalted butter
  • 50 ml slightly warm milk
  • 100 gm castor sugar

How to make Jackfruit Upside Down Caramel Cake

  1. For topping and caramel sauce:
  2. In a heavy bottomed non stick saucepan, dissolve the brown sugar and water
  3. As the syrup thicken add the butter and mix well until thick
  4. Take off heat and add the caramel sauce in a cake tin
  5. Add the chopped jackfruit pieces by evenly layering them over the caramel sauce
  6. Cake batter:
  7. Combine all the dry ingredients, except butter in a bowl and mix
  8. In another bowl, beat the eggs well
  9. Add the vanilla and milk . whisk well until well combined
  10. Add the butter and whisk well
  11. Add the wet batter into the dry ingredients by making a depression in the center and fold in well
  12. Add the cake batter on TOP of the caramel-jackfruit layer and evenly spread it
  13. Bake in a pre heated oven for 30-40 minutes on until done at 190 degree celcius
  14. Cool off completely and then turn and demould the cake
  15. Enjoy!
